We are happy to announce a partnership with local microgreen farm, BlueStar Greens! Located in Doral, Florida, just 14 miles from the heart of downtown Miami. BlueStar Greens lies along the intersection between technology and horticulture. In a past life, founder Roger Aspinwall spent 40+ years in the tech industry, and since 2012 he has leveraged his experience to solve problems with our local food system. Roger and his team have developed proprietary software and hardware to automate their vertical microgreen growing system, which unlike a traditional farm optimizes production space per cubic feet versus only square feet. Technology like BlueStar Greens makes it possible for densely populated cities like Miami to grow locally grown food through taking advantage of vertical space in retrofitted warehouses along the outskirts and suburbs of the city where real estate costs are low enough to run a viable local farm.
BlueStar Greens and Nabu Market both share the same vision of the future for agriculture and technology. By 2050, in an effort to move human civilization towards a more sustainable path, large cities will be forced to produce more locally grown food to sustain their population density. Our vision is to accelerate this trend by building a dense network of small local farms to create a much more resilient and robust food system.
Crops like microgreens, which initially gained popularity among the high-end chef community in Chicago in the mid to late 1990s, will be the future “cash-crop“ of urban vertical farms like BlueStar Greens due to their high-yield and nutrient density. Microgreens are vegetable greens harvested just after the seed or cotyledon leaves have developed. They are used as a nutrition supplement, a visual enhancement, and a flavor and texture enhancement. Microgreens can add sweetness and spiciness to foods. To order microgreens contact BlueStar Greens by using our Farm Finder.
